Rolo Brownies

For those of you who know me, you know I am a massive chocoholic and that brownies are my absolute favourite choice of cake! You can probably then guess that when I saw this new recipe pop up on Jane's Patisserie over on Instagram, there was no denying that I was going to give this one a go... and boy it did not disappoint! Lockdown has been all about getting back into my love for baking so why not kick things back off this year with a recipe that's bound to please everyone.

The Brownie Recipe:


INGREDIENTS

  • 200g Dark Chocolate

  • 200g Unsalted Butter

  • 3 eggs

  • 275g Light Brown Sugar

  • 100g Plain Flour

  • 50g Cocoa Powder

  • 250g Rolos (make sure to freeze these before baking!)

  • 100g Chocolate Chips

  • 100g Caramel (Jane's recipe uses carnation caramel, but we decided to leave this part out and they were still delish!!)

METHOD

  1. Preheat the oven to 180c and grease and line a baking tin with parchment paper - we used a 9x9" tin.

  2. In a bowl over a pan of simmering water, melt together the dark chocolate and unsalted butter until smooth. (You can also do this in the microwave). Leave to cool on the side for a couple of minutes.

  3. Whisk together the eggs and sugar until the mixture has doubled in size and is paler in colour.

  4. Pour the chocolate mix into the whisked sugar and eggs and fold together. Once mixed, add the flour and cocoa powder and fold through again.

  5. Add the frozen Rolos and chocolate chips until folded into the brownie mix.

  6. Pour into the tin, levelling the top until it is nice and smooth - if you choose to add the caramel, drizzle this over the top and swirl into the brownie mix.

  7. Bake in the oven for 25-30 minutes or until there is a slight wobble to the middle of the brownies - we found this took a bit longer than 30 minutes and placed some foil over the tin to stop the top from burning.

  8. Once baked, leave to cool in the tin. A good way to set the brownies as well is to place them in the fridge for a couple hours once completely cooled, this created a really yummy gooey texture to the brownies, which I loved!!
